Title: Main Dish Shredded Potato & Ham Pie

Yield: 1 Servings

5 Slightly beaten eggs
1pkFrozen chopped spinach -
  Thawed
2cChopped cooked ham (left
  Overs)
1cShredded cheddar cheese (4
  Oz)
1/2cMilk
1tbMinced dried onion
2cOr so peeled & shredded
  Potatoes
1cShredded cheddar cheese

In a bowl combine eggs, spinach, ham, the 1 cup cheese, milk, onion, salt and pepper. Set aside. Combine potatoes & the 1 cup cheese, press onto bottom and up sides of an ungreased 10-inch pie plate. Pour filling into potato lined pie plate. Bake in oven at 350 F. degrees for 50 to 60 minutes or until center is set. Let stand 5 to 10 minutes before serving. Serve with a salad and bread.

Of course you can change ingredients from spinach to 1 cup frozen mixed peas & carrots and instead of ham use chicken or beef. I prefer the spinach & ham and I was having guests for lunch, served this, and they loved it.
